Eating healthy: simple bbq pork chop dinner

This is one of our go-to meals during the week: baked pork chops (with a couple tablespoons of barbecue sauce), baked sweet potato fries (tossed with a small amount of olive oil, salt and pepper) and steamed green beans. It cooks quickly, it’s healthy and it tastes good.

One of the most valuable things I’ve learned in the process of changing our lifestyle is about serving size. See how the green beans and sweet potato portions are much larger than the meat? We’ve had to retrain our brains from the old thinking that a big ol’ hunk of meat should dominate the plate. One serving actually shouldn’t be bigger than a deck of cards. It’s a little weird to get used to, but it makes sense.

This diet is just as much about training my eyes as my stomach. I’m getting there.

(My Fitness Pal says this meal has about 385 calories.)

  2. Yum!! How do you make your Sweet Potato Fries? Mine always turn out mushy 😦

    • I cut them into strips then toss them with a little olive oil, salt and pepper. I spread them in one layer on a baking sheet that’s been sprayed with Pam (canola oil spray) and bake at 350 for about 20-30 minutes. I think cutting them thin and keeping them in one layer helps with crispiness. Hope this is helpful!
